BFL Recipe. Chicken Enchilada Casserole

Ingredients

    3 lbs. boneless skinless chicken breast  18 corn tortillas, medium  3 cups enchilada sauce 5 cups colby and monterey jack cheese, shredded 1 cup onions


Directions

Preheat oven to 350 degrees.
Boil the chicken in water until done. Drain & chop into small pieces.
Chop onion.
Spray a 13x9" pan with cooking spray.
Dip tortillas in the enchilada sauce one at a time, making sure they are completely covered with sauce.
Layer covered tortillas in the bottom of the pan, it should take six.
Add a layer of chicken, onion & cheese. You don't want the tortillas to be completely covered with any one of the ingredients but you should put about half of the chicken & onion & about 1/3 of the cheese.
Add a another layer of the tortillas dipped in sauce.
Press down gently all over the pan.
Add the remaining chicken, onion and cheese mixture.
Add remaining layer of tortillas dipped in sauce & press down gently again all over the pan.
Add the remaining cheese on the top.
Bake for 30-45 minutes, until cheese is bubbly, starting to brown and the casserole is hot all the way through.

So, My sisters and I made this casserole tonight, and it was so good! And you can eat it guilt free as long as you eat it in moderation. 
  I hope you guys will try it out, and let me know if you like it. Tomorrow, we will be making chili rubbed tilapia! Its very delicious!

    How much of a cook are you RJ?
    BTW if you like cooking whole chickens the best rack i've found is an "X" style rack you sit the bird on, allows full on circulation of air from youe oven fan, much more immediately useable meat & less fat as a result.
    PS a LITTLE bit of skin's allowed ..if Bean & chaos allow it!

  2. Have you got one of those small coffee cup sized vacuum flasks? I use one for a snack or a hot bit of quick hunger-proofing when out.
    Cheap packet of chinese noodles & a plastic fork (the spork variety) as it keeps stuff hot for around 6 hrs can tide me over nicely
    Also has proven useful for cooked hotdogs in a bit of hot water & simply taking some bread rolls & ketchup along! ..cheap lunch lessening the chances of wandering into a cafe & spending money on BIG treats!
    I also find that oriental shops are good for their flavoured snack noodles which whilst a few hundred calories can often give you the kick you need especially the hot varieties keep me away from snack crap whilst putting some more liquid back into me.

    What I love about this brand is tat they have several flavour sachets so you can get some real "hot lips" more chili & lemongrass than shrimp, nut very moreish!
